I have had a very busy and exciting month and wanted to share some of the details...
This past Friday, October 28th, I was featured as the expert on The Dr. Oz Show. J. Morris Hicks wrote a fabulous blog delineating the details of the show on his site. After Dr. Oz showed the massive beneficial results of putting 3 women on a whole food, plant-based diet for about 6 days, he had me explain how this is plausible in the real world. I explained how to appropriately and easily find protein, calcium, healthy fats, and carbs in the plant kingdom, all while improving your health. In the second segment, I demonstrate how to make 3 recipes from my book: It's Easy Being Green Smoothie, Mexican Noritos, and Beans and Greens Chili. Overall it was an incredible experience...going to New York City, taping at 30 Rock, and meeting Dr. Oz and his incredible team. One of the most rewarding parts of having this experience is that it helped my book and DVD rankings go all the way into the top 100 books and documentaries! The Complete Idiot's Guide to Plant-Based Nutrition ended up as #48 in all books, #2 in Nutrition, #2 in Nursing, #3 in Diets, and #4 in Medicine on Amazon. (Ok, yes, I have become obsessed with these numbers!)

Nori Edamame Salad with Miso Sauce

Our goal together is to bring healthy meal ideas to everyone and to not discriminate against omnivores. I completely concur...my goal as a Plant-Based Dietitian is to help everyone get healthy, no matter where they are on the omnivore to vegan spectrum. Thus, after playing with ideas for names including "Un-Sushi Salad", "Sumo Salad" and "Sayonara Salad, we decided to go with the obvious and to just name the unique ingredients...hence the title. Regardless, this is my new favorite salad and I cannot wait to eat it again.
It was a crazy experiement that ended up successful. I simply combined nori (seaweed sheets used to wrap sushi in that is FILLED with hard-to-find minerals like calcium, iron and iodine), salad mix (bagged for convenience with lettuce, carrots and red cabbage), shelled edamame, matchstick cucumbers, avocado and pickled ginger. I topped it off my tossing the mix in a store-bought miso dressing. YUM! I cannot recommend this salad enough. I guarantee you will love it and so will your body!

Noritos!

Plus, sea vegetables (including Nori as well as Hijiki, Wakame, Dulse and Kelp) are filled with minerals such as iodine, iron, and calcium. They are very low in calories (about 10 per sheet of nori) and contain zero fat so they make a meal healthier, lighter and much more nutritionally dense than a tortilla or bread.
I made 3 different variations of Noritos: a Japanese, Mediterranean, and Mexican.
The Japanese Norito contains brown rice, miso paste, cucumber, carrot, tamari and gomashio.
The Mediterranean Norito is made with hummus, red pepper slices, cucumber and sundried tomatoes.
Finally, the Mexican Norito...filled with guacamole, jicama, salsa and cilantro.
Easy meals in minutes...cheers!
